Welcome to Season 3 of Conversations with Amaka! 
In this first episode, I sit down with the incredible Iquo Ukoh—a Nigerian author, food blogger, and nutritionist—to explore the nuances of Nigerian cuisine, the art of grilling, and the cultural significance of food.
We dive into the truth about suya: ‘Suya is the meat; it’s the grilled meat. Whether beef, chicken, lamb, or ram, or what else, it’s the meat! The spice itself is Yaaji.’
We also discuss her blog, Anthony Bourdain’s visit to Lagos, the complexities of egusi soup, and the variety of dishes found across Nigeria. Plus, we taste suya dishes from two excellent Nigerian restaurants in Toronto:
