Recipe – Yogurt Panacotta

The wonderful thing about Dessert/light snacks, is the amount of variety; there are so many options, so many things you can whip up if you’re feeling a little peckish. In today’s recipe column, we have the Yoghurt Panacotta, a custard-like mix of fruit and cream. Enjoy.
Prep Time: 5 Minutes
Cook Time: 10 Minutes
Total Time: 15 Minutes
Servings: 5 Portions
INGREDIENTS:
• 10 grams of gelatin (1 tablespoon)
• 400 ml Plain sweetened yogurt
• 100 ml cream
• 1 tsp Vanilla essence
• 25 grams sugar
• TO SERVE: Canned fruit
METHOD:
1. For the Panna cotta, Place the cream, Yogurt, Vanilla essence and sugar in a pan and bring to a simmer.
2. Add the powdered gelatin and take off the heat. Stir until the gelatin has dissolved.
3. Divide the mixture among four ramekins and leave to cool. Place in the fridge for at least an hour until set.
4. To serve, turn each panna cotta unto a serving place. Spoon over, canned fruit and serve.
