One Pot Paprika & Kale Butter Chicken

Fresh, vibrant and delicious is what I call my Paprika butter chicken. This recipe proves that you don’t have to slave in the kitchen all day for your food to slay! It’s packed with flavor and very pleasing to look at.
What you need;
8 pieces chicken thigh
1 tbsp. smoked paprika
A bunch of kale (you can substitute with spinach or ugwu leave)
3 cloves garlic minced
Half a brown onion, thinly sliced
Two sprigs fresh thyme
3 Tbsp unsalted butter
Half a cup white wine
3 Atta Rodo pepper thinly sliced
2 Tsp fresh-grated ginger
Salt and black pepper to taste.
How to;
- Season chicken with half your paprika, salt and black pepper. Using a skillet, place on medium heat with 2 tbsp olive oil and pan sear the chicken on both sides, until nice and brown. Remove chicken from pan and set aside.
- To the pan, add your wine, garlic, ginger, onions, fresh thyme, atta rodo, salt, black pepper and the remaining paprika, combine well and allow cooking for about 2 minutes. Add your chicken back to the pot with half a cup of water and continue to cook until chicken is cooked through.
- At this point, you can add your butter and kale, cook for a few minutes and your one pot dish is ready!
- Serve with bread, rice or couscous
