HEALTHY FRIED RICE & LEMON HONEY CHICKEN WINGS by Chef Gina

HEALTHY FRIED RICE

INGREDIENTS:

HEALTHY FRIED RICE

  • heaped cup of Basmati brown rice
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • Half a tin of sweet corn (drained)
  • 200 grams of roughly chopped cabbage
  • Carrots, finely diced.
  • 350 ML Chicken stock.
  • Salt to taste
  • Tablespoons of Olive oil

 

LEMON & HONEY CHICKEN WINGS

  • 8 full chicken wings.
  • The juice of 2 whole lemons
  • 2 tablespoons of Honey
  • ½ teaspoon of salt
  • A generous sprinkling of black pepper.
  • 1 tablespoon of butter

 

METHOD:

  1. Marinade the chicken with the lemon, honey, salt and black pepper for a minimum of 2 hours.
  2. Wash the basmati brown rice thoroughly.
  3. In a saucepan, boil the basmati with enough chicken stock to rise above the rice by an inch. Cook rice for 10-12 minutes until it’s done.
  4. In a large frying pan, sautee the vegetables so that they still retain their crunch.
  5. Add the rice and stir-fry carefully, so the vegetables are not bruised. After 3 minutes, take it off the hob and set aside.
  6. Preheat the oven to 220 degrees C. Remove the chicken. Put the butter in the pan and brown it on the hob on all sides on a high heat.
  7. Put the chicken wings in the oven for 25-30 minutes with the remaining marinade.
  8. Serve with the fried rice and some lemon wedges.
