INGREDIENTS:
HEALTHY FRIED RICE
- heaped cup of Basmati brown rice
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- Half a tin of sweet corn (drained)
- 200 grams of roughly chopped cabbage
- Carrots, finely diced.
- 350 ML Chicken stock.
- Salt to taste
- Tablespoons of Olive oil
LEMON & HONEY CHICKEN WINGS

- 8 full chicken wings.
- The juice of 2 whole lemons
- 2 tablespoons of Honey
- ½ teaspoon of salt
- A generous sprinkling of black pepper.
- 1 tablespoon of butter
METHOD:
- Marinade the chicken with the lemon, honey, salt and black pepper for a minimum of 2 hours.
- Wash the basmati brown rice thoroughly.
- In a saucepan, boil the basmati with enough chicken stock to rise above the rice by an inch. Cook rice for 10-12 minutes until it’s done.
- In a large frying pan, sautee the vegetables so that they still retain their crunch.
- Add the rice and stir-fry carefully, so the vegetables are not bruised. After 3 minutes, take it off the hob and set aside.
- Preheat the oven to 220 degrees C. Remove the chicken. Put the butter in the pan and brown it on the hob on all sides on a high heat.
- Put the chicken wings in the oven for 25-30 minutes with the remaining marinade.
- Serve with the fried rice and some lemon wedges.
