Sweet potato pancake anyone?
Pancakes are so easy to make! The basic pancake is made from a simple mix of eggs, flour, milk and baking powder for leavening.
The perfect pancake should be fluffy and moist, ready to be piled high and devoured. For this recipe by Jennafer Ashley, mashed sweet potato is the secret ingredient to making perfect gluten-free pancakes.
Sweet potatoes provide a boost of fiber.They contain a good amount of vitamin A, vitamin C, manganese and several other vitamins and minerals.
In addition to the nutrients above, Sweet potato also contains riboflavin, phosphorus, vitamin E, vitamin K, calcium and iron
Utensils
- A pot
- Large mixing bowl
- Whisk
Ingredients
- 1 small sweet potato (about 1/2 cup mashed)
- 3 cups of sieved flour
- 2 eggs
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of cinnamon
- butter
- syrup or honey for serving
Instructions
- Begin by boiling 1 small sweet potato in water until soft. Remove skin. Mash smooth with a fork.
- Beat eggs in a large mixing bowl. Add sweet potato, flour, baking powder, and cinnamon.
- Whisk with a fork until smooth.
- Heat a large pan over medium heat. Melt 1 teaspoon of butter. Scoop a spoon of pancake mix and pour into the pan.
- Cook 2-3 minutes.
- Use a spatula to flip and cook an additional 3 minutes. Serve hot with butter, honey or maple syrup
