This Piri Piri Chicken Recipe is Perfect for a Holiday Dinner!

This Piri Piri Chicken recipe is definitely for the win!

If you’re stuck on what to cook for your special guests this Holiday, Zeelicious Foods is here to save the day. Winnie is introducing us to her delicious Peri Peri Chicken recipe and it looks finger licking good!

She starts off with;

  • Seasoning some chicken thighs with finely chopped garlic, paprika, chicken bullion cubes, ground nutmeg, cumin powder, thyme, black pepper, salt and some vegetable oil to bind it all together. You can choose to wear a glove to massage the spices deep into the chicken thighs.

  • The next step is to add some vegetable oil into a non-stick pan ensuring the bottom of the pan is well coated with oil. Add the chicken to the pan with the skin facing downwards and the heat set to medium-low and allow to cook for 4-5 minutes.

  • While that is going on, place another pan on the fire with the bottom well coated with vegetable oil. Add some halved fresh tomatoes, onions, chili peppers, scotch bonnet peppers and garlic to fry for about 3-4 minutes. When the onion etc is charred on one side, flip to the other side and fry as well.

  • Transfer the charred onions etc into a blender, add some paprika powder, some thyme, cumin powder, nutmeg, chicken bullion cubes, black pepper, and blend until it is completely pureed.
  • Next, take your pureed onions, pepper etc and coat your cooking chicken thighs. Ensure all the chicken pieces are coated completely. Here, you can cover and leave to cook on the medium-low heat for about 7-8 minutes or transfer to an oven to finish the cooking process.

  • And you’re done. Add some freshly chopped parsley and serve with some steamed rice, fries or even eat it alone. It even goes great with her Jollof Rice recipe we shared last week.
