Strawberry Shortcake Recipe by Ifeyinwa Ojekwe

I’m well into My Healthy Kick (update coming soon), but every now and again I like to treat myself (and the ones I love) to something sweet. I saw this recipe on Cook with April and decided to give this recipe a try- it has fruits in it so it can’t be that bad right? Lol. Plus who doesn’t love strawberries? Strawberry shortcake is really easy to make, not too sweet and is surprisingly light. You don’t need too many ingredients so if you’d like to give it a try, here’s what you’ll need:
2 cup strawberries
1/2 cup white sugar (or more to taste)
2 1/4 cup white flour
2 tsp baking powder
2 tbsp white sugar
1/4 tsp salt
1/3 cup unsalted butter
1 egg
2/3 cup milk
*I halved all the ingredients in this recipe

Wash, de-stalk and cut your strawberries in half, then toss in sugar and store on the side
Combine all your dry ingredients together in a bowl

I used a fork to add the butter in (a little bit at a time) until the mixture resembled coarse crumbs as pictured above

Then add in the egg and milk and combine to make a dough

I decided to bake the mixture in a muffin tin but a normal pan would work fine - don't forget to grease it first! Bake for 15 - 20 minutes until golden brown at 220 degrees C (or 425 degrees F)

And just whip it in a bowl using an electric whisk until it stiffens up like pictured above
